Among the core principles of the Salem Public Schools 2023-26 Strategic Plan is elevating learning. It is alive and well within the Salem High School Career Technical Education (CTE) Culinary Arts Program.
On Friday, Dec. 6, SHS Culinary Arts scholars partnered with Historic Salem for the annual Christmas in Salem House Tour.
Months of preparation went into the occasion as the Culinary Arts students recreated dishes from George Washington’s 1789 visit. The menu that was created included dishes that George Washington enjoyed, but with a modern ‘Salem’ touch. Among the menu items served included:
- Squash doughnuts, molasses cake with maple cream
- Roasted duck with cranberries and oranges on peppered hoecake
- Roasted lamb chop with garlic and cilantro chimichurri
- Scallion panko cod with red onions and Swiss chard
On the day of the celebration, the three culinary teachers and seven culinary students prepared, garnished, and served the hors d’oeuvres for 100 guests.
A quote from the students who attended the event noted, “Excellent collaboration, well-organized, and never-ending chances within CTE make for a terrific experience.”
